I tend to side with the Coarse styles and think they make for a superior product. The addition of white wine also helps mute some of the less savory parts of the acidity in the liquid

What are your thoughts on Horseradish

A wonderful treat. Every Christmas we have a big jar of super hot horsey mustard. But it's a niche product.

some kind of fancy stone ground will be the best by itself, but for what it does I will take plain old yellow mustard as the goat, it wins on hotdogs and brats and that is mustard's true calling

I used to live near the Maille store in Paris. The American mind cannot comprehend the variety of mustards that exists in France. The best mustard depends on what you’re eating it with. With a pretzel you obviously want stone ground. But have you ever had pistachio mustard? Fucking amazing on a salad with goat cheese (in a small amount).

Also truffle mustard on lamb. Or whiskey and black pepper on a buttery steak.
