Second and third stars are earned more for the overall experience (creativity, plating, innovation, and yes, ambiance) and consistency rather than simply being tastier. The less pretentious one-stars are pretty much guaranteed to be bangers, while the two and three star places can try to do too much

With that said, the best beef I've ever had was at a 3 star, and the best fish I've ever had was at a three star, but the best lamb I've ever had was at a no star

The criteria specifically state that ambiance and service are not considered. There are loads of mediocre to shit 1 stars. While not all 2-3 are bangers, pretty much all of the best worldwide meals i’ve had have been at 3s.
