The problem is that most NICs won't do anything between 1 and 10gbe. They won't drop down to 2.5gbe, so you have to go all in and make the whole network 10Gbe. I'm building out with laptops as much as possible now because they have built-in terminals and you don't need a UPS. A lot of them come with Thunderbolt too.
