I've made that recipe many times, it's my favorite in Molto Italiano. It's delicious without the mint.

The picture is not food porn material. After you brown the thighs, and then add stock and aromatics, be careful to add only enough so the skin doesn't get covered, so it will still be crunchy and beautiful. The stock will reduce and will be delicious with polenta.

I suggest oregano instead of thyme for your salad, but both are fine. Feta would be nice, but not necessary.

And, just me, but I like having cheese before dessert.

1/4th cup of oil, divided by three (recipe cut by three) is 1 T + 1 tsp of oil.

After you remove the thighs to a plate after browning, you can spoon out and discard some of the rendered fat, but leave about 2 T for the aromatics. After the onions are soft, 8-10 minutes, add olives and carrot. Place thighs skin side up on top of aromatics in a single layer. Add just enough stock so that the chicken skin is not submerged.

Sautéed Chicken With Green Olives and White Wine for 2

Adapted from Gary Danko

1 1/2 tablespoons extra virgin olive oil

2 leg-thigh pieces chicken, cut in 2, or 4 thighs

Salt and freshly ground black pepper

1 cup white wine

1/2 cup cracked green olives

1/2 lemon, thinly sliced, seeds removed

1/4 cup broken walnut pieces

handful coarsely chopped parsley leaves, for garnish.

1. Put oil in a deep skillet or casserole, preferably nonstick. Turn heat to medium-high. When oil is hot, add chicken, skin side down, and brown it well, rotating and turning pieces as necessary, about 10 to 15 minutes. Season with salt and pepper.

2. With chicken skin side up, add wine and olives. Adjust heat so mixture simmers vigorously, 10 to 15 minutes.

3. When chicken is almost done, place sliced lemon on it, and cook 2 to 3 minutes more. Arrange chicken and lemon on a platter, and stir walnuts into sauce. Taste, and adjust seasoning, then spoon sauce over chicken. Sprinkle with parsley, and serve.
