Do you have an interview lined up? It all depends on the type of work, size of the department and the company + seniority level of the position.
A lot of it is knowing someone or the right people in the company, or knowing someone who does.

Read some blog articles on GDPR and CCPA
Know the difference between warranties and indemnifications and liability caps and trademarks and copyrights and trade secrets and patents.
Odds are they are looking for a sense that you have a good enough background and know the big issues and enjoy working with the Zany Antics of the business teams
Fit is going to be a big point they look at and that just means be friendly and relaxed (and of the right demographics)

Good stuff in here. If privacy is an important element, say that you are stufying to take the US/CIPP exam (it is no more difficult than the MPRE, but ppl like it).
Easily explain what you do now and why this company/position will help u acheive your career goals.

Also once you get the job get them to fund your CIPP/US exam and take it for realz. (After October or so when the new content is released.)
Privacy Law is fun because it’s always in flux
Privacy Shield -> EU SCCs -> GDPR DPA and we know our dude bros in Europe aren’t going to stop with that
Plus CCPA is just the tip of the iceberg as the 50 states get in on this
(For 2019-20 CIPP/US is king. In 2016-18 CIPP/E would have been more prestigious but for the time being companies are more horrified by California than they are by Europe. CCPA launches in Jan but the legislature is STILL likely to make large scale changes to it. Companies are in the lurch knowing they need to make big investments to comply with it but are procrastinating to avoid spending too much lest the law be watered down before Jan.)

I have actually done this (given interview) recently so here's what i was looking for:
1. know their business (and the business unit you'll be working for for extra credit) and what kind of legal work that entails (or at least make a educated guess) and be able to talk the basics on them. This is vital.
2. For every point on the job description, have a story ready that demonstrates how you have done a similar job in the past, with emphasis on demonstrating resourcefulness, ability to provide creative solutions, and understanding of business mentalities.
3. personality is really a crap shoot because not everyone is looking for the same thing. Some may be impressed by the assertive, expressive alpha type, while others may in fact look for the exact opposite, just someone who keeps their head down. Sniffing this out prior to the interview can be very helpful.
