saigon cinnamon is the boldest flavor but if you're eating it regularly should consider ceylon cinnamon for lower coumarin content re hepatotoxicity. i like whole cumin seeds, and keeping a mortar and pestle on hand - a little extra work, but the aromatics/VOCs in a lot of spices are a lot better freshly crushed.
local spice houses can give you some really nice flavored whole coriander seeds (fruity) but the markup is so crazy that if you're eating a lot of it, i often go with cheaper whole seeds. |
