its a reflex driven by their subconscious insecurity over their own lack of judgment and taste. they actually don't know if it's ai or not but they would rather appear skeptical as someone with a discerning eye than be the person who fell for it. but when they lodge the accusation they're exposing themselves as precisely that person by preemptively performing the opposite, and feeling the need to declare it publicly. great way to tell everyone they have zero judgment and are deeply embarrassed by that.
same reason all public judgments of art or even science are shit. deep down nobody trusts themselves to be able to judge a work of art or creativity so they look to the person to their left to gauge whether they're supposed to be impressed.
