propoane is identical to your ovens broiler. charcoal is real grilling. the unevenness and smoke is desirable. propanes advantages are all about convenient. and it is convenient: i wouldn't want to cook for a large party on a charcoal grill. and grilling outside is fun compared to getting your burgers from your ovens broilers.

No. Too unpredictable and hard to light. Charcoal is consistent and burns long. You grill hamburgers over wood? Smoking sure, but I still use charcoal as the heat with wood as the flavor.

The idea was to sear steaks on it, as it's too smelly to do indoors, but so far the few times i've tried it wasn't hot enough, so I've been kind of doing a reverse sear, where I cook on blackstone, then sear on indoor stovetop.

Lump charcoal is perfect for steak because it burns hot and gives you bigger flames than briquettes. I prefer it in general because it leaves a lot less ash and the flavor can be better. It's hard to find good lump charcoal though, and off-brand lump charcoal is usually better than the big names. Cowboy has always been a bottom tier brand and I've gotten lumps with flooring nails in them.
