You need a cut with good fat content but also some robust flavor. I did these on the Weber Kettle, but I brought them up to speed with some low and slow smoke. Then I did reverse sear. The freshly made tortilla gives you the warm pillowy carb base, then the robustly flavored steak, some cottage cheese doe creaminess and coolness, and then the fresh bite from the pico de gallo. It’s the perfect fajita. Nobody needs grilled onions and peppers basically had fried on a super hot skillet in a vat of butter. |
