I don't have a side burner or a gas anything. Just a charcoal kettle grill. I have a couple thermometers and I bought a stainless steel insert to help with offset indirect cooking (it's called a slow-n-sear and it cost more than the grill itself). It's not a perfect fit, but I've learned that it's the best fitting ill-fitting clique for me. So my GRILLRIG is pretty clearly aligned with the sentiments of a NERD (charcoal only, harvest my own smoking wood, use high quality grill inserts (slow'n'sear), have thermometers, do smoking/grilling as a hobby). It’s the equivalent of dudes who can listen to a car driving for 20 seconds and know exactly what is wrong and how to fix it. Easily the most valuable skill I acquired while I was in college.
All that said, charcoal is CR for burgers (searing in pan first then finishing over charcoal). |
