Two nights is overkill for Plitvice. Get there in the evening and walk the park starting at opening time the next morning. You won't need to spend more than 4-6 hours in the park.

Zagreb for 2 nights. Drive to lakes on second night. Check out lakes next day then drive to Ljubljana that night. Spend two nights in Ljubljana then 2 nights in rovinj/pula area.

I'm travelling through Austria so unfortunately the better southern parts of the croatian coast don't really work with my itinerary. With that in mind how does the above sound

You're keeping a car for the full drive? Sure, that's doable. I was pleasantly surprised by Zagreb ... clean, safe city that's filled with cafes.

Most of the drive from Zagreb will be on a 2-lane road through hilly terrain, just fyi.

Check out the town of Slunj. Maybe 15 minutes north of Plitvice, interesting place to either have dinner or find a hotel/pensioner to stay. They have their own waterfalls there, too.
