Nimes is also a surprisingly nice small city with some Roman history. Also could maybe do 1 night in Menton to eat at Mirazur. Can also reco some good spots in the town. In Marseille it's AM par Alexandre Mazzia and Le Petit Nice. Le Petit Nice is in a history (1917 vintage?) relais & chateau property of the same name and it's in the 6e of Marseille which feels more beach town than city. Going there for 1-2pm arrival, relax by the pool, walk around the hood, have dinner in-house, then go to bed and leave the next day would be fine.
