I like Devi quite a bit, in Union Square. That's not traditional, though. It's fusion between Indian and French. The pastry chef there has trained with french masters, and makes french pastries with indian flavors.

I generally don't go out for Indian food. I don't like Indian restaurants in the US that much.

No, they're not the same. Vadas are hot and crispy and donut shaped. Bonda are soft and mushy and shaped like a ball and are usually sold streetside.

The most common potato for breakfast dish I've had is some version of potato curry eaten with a roti. It's a casual breakfast. Bhaturas are also usually eaten with either chickpeas or potato curry.

Regardless, I suggest you walk up to an Indian person and suggest that potatoes are "rare" on Indian cuisine.

Boil potatoes. Depending on size, this probably takes about 30 minutes. Careful not to overcook or the potatoes become gummy when you mash them.

At that point, you can add whatever you want to them. No matter the recipe, you want some milk and generous amount of butter. Salt and pepper to taste.

Then add whatever you're in the mood for. My favorite is some white truffle oil. Or you can add horseradish. Or brie and nutmeg.

Roasted garlic is also delicious, but more work (put garlic on baking sheet, drizzle olive oil and salt and pepper on it, 45 minutes at 400 degrees).
