It is really hard not to be noticed doing it. The whole point of counting is that it sometimes suggests that you should do something different than basic strategy. The dealer is always counting and always knows basic strategy says you should do A and the count says you should do B. If, when those differ, you do B even a few times, the dealer knows what you're doing. They may let you get away with it for a while, especially at lower limit tables, but they won't let you walk away with big money.
People sometimes draw it out a while by periodically ignoring the count when they think somebody is watching them or by moving around from pit to pit and casino to casino frequently, but ultimately it is an awful lot of work for a relatively small amount of money, and the money is still by no means guaranteed.
If you want to make money on cards, you need to get really good at poker.

It can be done, but it works better with a team. Your take doing it solo will be relatively small as it only reduces the house's edge by a few percentage points.
What made it work back in the day was the team concept and large $$ backing it up.
