The biggest is the rapacious greed of the franchising company, which generally takes advantage of franchisees in a variety of intricate ways. Buying a franchise is not like buying some magic machine that shoots out money. It's true that some people out there have gotten rich through franchising, but if you think they are common, you are suffering from a little condition known as survivorship bias. 1. you're losing another 5-10% off the top, in addition to taxes, in the form of royalty payments

2. you're losing another 20% off the top, in the form of sandwich ingredients you'll be tossing out (in order to make your inventory levels consistent with the fraudulent sales) or

3a. you'll be directly intervening to make sure that your inventory orders ~ignore~ the fraudulent sales, which will be a red flag for the investigators and also

3b. will attract the attention of the franchisor, who probably monitors (if not outright controls) your supply chain, and will take a keen interest in the fact that you don't seem to be buying enough food from them to account for all the sales your making (implying you are either sourcing cheaper ingredients elsewhere, or simply shortchanging the franchise's customers).

things that make a laundering option good are:

super low variable cost for sales (so that you can just make the appropriate inventory or supply purchases and toss them out without worrying about cutting into your take too much)

places where the cash exchange is not so readily viewable (so that a pig can't just sit on the street with a clicker and count how many people walk into your subway)
