understood
with smoker can smoke roast beef, turkey and hot link then make into giant hoagies
edit: key is to not give people choice. lettuce tomato onion and a cheese. have condiments out and let them do that work. serve with bag of chips
maybe half chickens that you grill or smoke then serve with potato salad or coleslaw on side. easy food prep and serving

needs to be simple and ingredients you can re-use. how many people do you normally feed at a lunch hour? is 200 realistic? you could just say "i can only feed 100" or whatever and then they'll line up for your shit. generate some buzz that way
i think you have to do like bbq one day, then turn them into sandwiches or tacos the next, etc.
you should also load up on add ons like candy, soda, ice cream if you can, etc. - if they are a captive audiecne you can charge a not unreasaonble margin on small items which are easy to stock and replenish. that's prob where most of your money will come from

Yeah I'm hesitating on serving the same damn thing every day. However, when I used to sell BBQ on the side of the road, I often had customers who would come TWICE in one day. And there was only one BBQ sandwich and the side.
My only apparatus here will be my tow-behind smoker trailer (w/charcoal grill) and a cooler to keep the meat.
The other thing is i am probably going to hire Hans to run it. You are going to kill me for sayin this and i'm already laughing but I am not going to be around the truck since I just last week took a short-term opportunity in a different state to make sick mechanic money.

i mean that's great, ultimately you are not gonna make money manning a food truck, you may make money owning multiple food trucks
yeah i think with your smoker you focus on BBQ and just do a different type every couple days. offer a sandwich version, e.g. brisket and beans, or brisket sandwich and chips, something like that. totally depnds on the capacity. keep in mind not all 200 will eat from your truck, so plan for like 100 or wahtever.

Pulled pork will require smoking- a 12 hour process for that shitcut of pig.
I'm going out of state to take a mechanic job in the meantime.
So I'm gonna have an employee do it, which means I want to cut the prep and complexity down to 0 or close to it.

I actually fabricated and welded a full size pullup par (goes 9 feet tall) that telescopes out from the smoker, as well as dip bars.
You would laugh your ass off.
I go to catering events and then challenge the biggest guys there to a pullup contest, they never hit more than 10 shitty ones, and then I demolish them LOL
