Greeks were exposed to civilizations on the eastern med more early and more often, and those cultures probly got their start by interacting with the Middle East/Egypt.

Gauls and Germans were farther out in the frontier and isolated from the main water trade routes (the Mediterranean). It's much easier to ship goods and people and knowledge over the water than it is to send it over the alps.
