many WR routes are run close to the sidelines, which generally means 1-on-1 or at most 1-on-2 "jump balls" between a WR and a defensive back. those are basically just tests of speed, leaping ability, and to some extent hands.
other routes can be run as slants, post routes, etc. through the middle of the field. these can often yield big gains because it's harder for a defense to play man-to-man coverage in those situations. since the route is more tactical, speed and jumping aren't as critical. but those routes tend to be more susceptible to crushing hits from safeties and linebackers (who are larger than cornerbacks) coming in to make the play.
many WRs outright refuse to run those routes because of the risk of injury, especially the higher-paid ones. New England has found this rotating cadre of white guys that are willing to run any route anywhere, and have used it to great effect. But each of those white guys has had a ton of injuries (more than the usual WR) because of it.
