It's actually usually white or Hispanic dudes or white women. Contestants usually restaurant owning chefs or otherwise pretty good chefs

They get baskets of 4 mystery ingredients that they have to make into a meal in 30 minutes; ingredients are usually an odd combo such that everyone's like "how the fuck do we make something out of pig snout, cheetos, and lime jelly". Then judges uh judge them. It's fun, only reality(?) show I watch with any frequency
