Date: April 18th, 2018 9:37 PM Author: impertinent stead "well done" is marginally better but doesn't solve the problem. in-n-out's approach of frying fresh-cut potatoes can't make proper fries which should be golden and crispy outside and fluffy and soft inside. the key to getting this consistency is blanching the fries, freezing them, then double frying before serving.
