You know how plastics leech chemicals into your food and water when they get hot? Like if you leave a water bottle in a hot car, then take a sip, the water will taste like plastic.

Now imagine you're sealing a steak in plastic and leaving it in hot water for HOURS

Sous vide temps do not get hot enough for plastic (bottles) to leech

They start leeching at 158 F, and a hot car can get into 160s or 170s

Medium rare steak is cooked to 140 F, nowhere close

also no one is vacuum sealing their steak in a fucking plastic bottle, and there are different types of plastics, sous vide plastics are different

your common disposable water bottle has BPA, but sous vide packages do not, which means even fewer chemicals anyway

corollary: (guy who unironically breathes the shit air of a major US city but clutches his pearls about the occasional sous vide)

brother....sous vides are water baths that cook steak evenly throughout. so if you set your sous vide to cook a steak medium rare (140), it's going to heat the water to 140, and eventually the entire steak will be a consistent 140, no hotter anywhere.

There's a lot of shit besides BPA that leeches out of plastic. BPA is just the one we know the most about. No one selling sous vide products will ensure you that NOTHING leeches out of their plastic. Everyone understands it's a risk.

Not significant. It's when you heat the plastic that things go bad.
