Give them a rate for a basic will and power of attorney package that is slightly cheaper than the going rate in your town. Focus on younger yuppie families with small children.
Find a great set of forms from somewhere, get a few trust and estate lawyer friends to bounce questions off of and occasionally ask for language (when your client wants something funky in their will)
Get to know a good accountant to send clients to, and to bounce tax questions off of related to trusts and stuff |

If you're chasing middle class clients, learn the treatise, but more and more you will need to know elder law (Medicaid planning for long term care).
