Making brisket, butternut squash bisque, arugala salad, and corn tonight (TSINAH

Date: September 18th, 2022 7:20 PM Author: pearly self-absorbed hospital I started the brisket yesterday at around 11pm. It's been resting for almost 8 hours now. It looks AMAZING. USDA Prime from Costco, so I'm quite excited. I smoked it on pecan for roughly 17 hours. there was some exquisite marbling, so I'm stoked.
The butternut squash bisque is being made from leftovers: I have a butternut squash, obviously, onion, shallots, apples (apple sauce, technically, but it's no different), beef broth, and coconut milk. Plus some misc spices (I'm thinking curry powder, nutmeg, and ginger).
The arugala salad will be arugala, shaved parmesan, grilled watermelon, and a lemon dressing (fresh lemon juice, honey, salt, and pepper).
Finally, the corn: It'll be simple corn on the cob, which I'll first massage with the rest of my smoked wagyu tallow and then grill on high until I get some good grill marks & it's cooked perfectly. I'll then lightly salt it with fleur de sel.
The best thing about being an incredibly accomplished amateur chef is that I can make 180 meals at home. In fact, anyone can. It's extremely easy and it just requires a good feel for flavors that go together. It's not rocket science, and I would be happy to help anyone looking for healthy recipe ideas. E-mail me. |

USDA Prime matters because it's about marbling, i.e., intramuscular fat distribution. Of course it matters. It always matters unless you're making burgers. I go for the leanest cut I can get for burgers and just add wagyu tallow as necessary. |

It's like the equivalent of a human's pecs. You need to cook it low and slow to render out most of the fat to make the extremely tough meat edible. The more intramuscular fat, the better. That's why USDA Select brisket is only good for grinding into burgers and USDA Choice/Prime are good for smoking & eating as bbq.
