we had some flooring replaced, and hired a demo company with a big machine to do the demo of the tile. in getting their big machine into our house, they cracked the front row of tiles on our entryway.
demo company was super proactive and nice about it, and owner without me even asking apologized and told me they'd make it right. owner told me that there's no way to match those tiles and they'll have to give me me an entirely new entryway.
owner told me to go to the flooring store and pick out tiles we want and he'd install it, and he'd pay for something in the normal range of tiles but if we wanted something fancy we could pay the difference. owner said to hold off on paying the $1000 bill for the demo, and we'll settle up everything at the end once the repair is done.
wife and i went to the flooring store, and decided we wanted to do mini bricks on the entryway, which are $12/SF. normal tiles equivalent to what we had seemed to be ~$3/SF.
i went with the owner to the flooring store and we figured out how much material we needed (bricks, "thinset" [still dont know wtf that is these goy terms mean], grout, "sealant" [ibid.]). i paid for the materials on my card.
owner has been really nice about it, but did note that it's a lot more labor to install the bricks than tiles. the install job has been taking a ton of labor time, and his guy doing the install is really, really good and it's going to turn out great.
question is how much do i owe the owner, under talmud law and prole goy fairness law?
i think i owe him $1000 less ~3/SF * the size of our entryway less the what thinset/grout would have cost to do this kind of job with tile (i have no idea how much that is).
i think a prole goy fairness answer would be to be happy we got a brand new entryway that looks awesome and just be happy covering ALL the materials myself with no deductions, and pay him the original $1000.

he clearly meant pay the difference in materials. at best, he meant materials. at worst, he didn't contemplate the possibility of a different material resulting in a significantly higher labor cost.
and if he didn't contemplate that, once i informed him that i wanted the "faggy bricks" and he realize the labor cost would be significantly higher, his failure to say that he'd expect me to cover more of the labor -- and my reliance on his silence -- results in an agreement that he's coverign the increased labor.
