Yeah I can. I'm in decent shape
However, do I have to come in as an O-2/O-3 like most JAGs? I have like 10 years of litttigator experience and an LLM.
Also how long does the process take? I heard its like a year and they might throw up barriers

Seems like you are wrong
https://www.rand.org/paf/projects/dopma-ropma/officer-accession/constructive-credit.html
Chaplains and JAG Officers: Entry grade credit shall not exceed 3 years. Constructive credit awarded may not result in an appointment about the O-3 grade.
1 year of constructive service credit will be awarded for each year of graduate level education to persons appointed, designated, or assigned in an officer category that requires such advanced education or an advanced degree as a prerequisite for appointment. The amount of credit awarded will not exceed the number of years the majority of institutions that award degrees in that field require for completion of the advanced education or award of the advanced degree.

Imagine doing an entire cross-fit class
resting for only 10 minutes
and then running 2 miles
I doubt you'll be busting out 6 min/miles

What does a JAG reserve officer actually do during monthly and summer training? Do you basically do a bunch of CLEs while on a base?
How did you take the time off from work for basic training etc?

Short answer is yes. Long answer is the US Army Reserve is made up of non-combat personnel largely organized into homogenous formations by functional area. For instance, a Legal Operations Detachment is a large group of lawyers that is an available pool of replacement/backfill personnel for the greater Army. My opinion is: personnel in the US Army Reserve are unlikely to be involved in kinetic moments.
The National Guards of each state are more or less organized into self-contained deployable brigades, including combat troops and organic support entities. Several states employ special forces groups. It has not been unusual in my career for a senior NCO in the national guard to have been in combat in the early to mid 00s in Iraq and Afghanistan
