Seared scallops with a light lemon butter sauce, top off with some chives and sea salt. Pair this with a crispy mineral-y Chablis or maybe a light champagne
Serve this with a nice charcuterie board with whatever rare artisan cheeses you have access to. I'm talking soft Frenh cheese, Monte Enebro (spanish goat cheese), a spicy gorgonzola - if you really wanted to impress them you could find some langres and pour a little brandy into the divot on top. Get some nice unusual meats like truffle salami or some aged iberico ham. Pair this with a smooth Sherry and a some small pots of honeycomb and fig jam.
For your beef tenderloin - do it herb-crusted (thyme, rosemary, minced garlic. Pair this with a strong full-bodied Cab or a bold AF Barolo to match the beef herbal richness. For your stovetop au poivre sauce add a little balsamic or your finest dijon mustard to add depth.
Get your wife to add some avocado slices, toasted pine nuts and a sprinkle of goat cheese to the salad.
Oven roast those potatoes with rosemary, thyme and lemon zest.
You can offer a light Sauvignon Blanc or a dry rose to palate cleanse.
Scrap the fruits for dessert and instead make a chocolate fondant with a salted caramel core. Like a rich, molten chocolate cake with a flowing salted caramel center which you can serve with a scoop of vanilla bean ice cream. You'd be wise to pair with this a vintage Port or maybe a late harvest Rieseling.
