its not necessarily bad, but knowing where something comes from and its purest forms helps to understand and appreciate the derivative more, or sometimes less. take the fusion of mexican and asian that is increasingly popular in california, is this a new cuisine? or is it just some bastard local hapa child? what exactly is a burrito filled with bulgogi, or using american barbecue in nigiri? at what point does something become bigger and novel?
without a doubt, new world vegetables and spices, especially the magic 8, transformed european cuisines. european food changed dramatically post columbus. this by far is the greatest contribution from pre columbian american cultures on food, not just in europe but cuisines around the world.
but "mexican" food on its own is a dead end. it is not going to be elevated or grow into something better like french or asian food post columbus after the introduction of new world vegetables and spices. take the cacao bean, one of the magic eight. it had been in the americas forever, but it only became coffee after its arrival in europe. truly great cuisines grow and become better. mexican food is the same as it has ever been.
as tommy alluded down thread, there is no demand for "mexican" food in the world, so that should tell you something even as the world is becoming seemingly smaller and flatter, where you can get almost any food or ingredient anywhere in the world. you could make an argument for tex-mex (which is what i really think americans enjoy and what you think of as mexican food), but most mexicans look at tex-mex with disdain as some american red headed step child. but mexican food as a cuisine is not going anywhere. if thanos killed all the mexicans in the world with a snap of his fingers, only tex mex would remain. nobody else would give a shit about mexican food.

the mexican diaspora is poorer and doesn't travel far from home.
the transformation you mention of european cuisines with new world spices just happened in reverse in mexico. they used european techniques and ingredients in conjunction with the local ingredients and knowledge to create something truly different. if that's not elevation what is? i think you're trying to make a distinction but i don't think it's a good one. it's simply not true to say that mexican cuisine is the same as it has ever been.
tex-mex is great but i love authentic mexican food as well. there is great variety in authentic mexican cuisine--from seafood in ensanada to poultry to red meat, they have it all, and it is all complemented with some truly unique flavors from the chiles and salsas that are not as commonly used elsewhere.

yes, those are indigenous foods to mexico and still exist in the cuisine.
meanwhile, the spanish brought pork, chicken, beef, goat, lamb, rice, sugar, oil, vinegar, dairy, wheat, onions, garlic, lime, and the technique of frying, none of which existed in the new world beforehand.

Mexican gets a knock for mediocre desserts. As a fatass sugar addict, it’s interesting to me that white countries like Germany generally have bland food, but some of the best desserts in the world (which is why I give #1 to France: contender for entrees and sides, but #1 for desserts by a landslide). Italy is outstanding but mediocre desserts, Asia in general is dogshit for desserts despite having better food than Europe overall. India and the Middle East are both contenders for high tier mains and desserts.
All that said, most Mexican food is some variation on corn tortillas and a meat/cheese/veggie filling, which combined with some sort of sauce/salsa is a perfect everyday staple. Mediterranean staples are healthier and probably best tasting when normalized for nutrition, but for pure taste Mexican food is hard to beat as a staple.

I think you're being a little harsh on the desserts. Tres leches, flan, and churros are a respectable trio. What are your favorite Indian or Middle Eastern desserts that you would say are definitively better than those three besides baklava? Knafeh, gulab jamun, the various overly sweet Indian desserts, I wouldn't say any of those are a tier above.
As far as desserts go I think the French really define the category. Even Asian desserts borrow heavily from the French.
Mexico suffers from a lack of good bread. I think that's the biggest problem area.

To be fair,
LJL at sneeringly condemning Thai food as "just another mishmash of [the same three ingredients] yummmmm" in a thread where you are are simultaneously extolling the many splendored culinary glories of, uh... Mexican food.
Sit down for this "amigo," I'm going to let you in on a shocking secret that will blow your mind -- you'll never look at "tacos" and "burritos" and "nachos" and "fajitas" and "chalupas" and "chimichangas" the same way again!

To be fair,
Except that's not what you said above, instead you shit on Thai food for being "just the same three ingredients over and over again with slight variations" even though you're also waxing rhapsodic about how INCREDIBLY VARIED Mexican food is (LJL).
Oh wow yeah that's a great point of distinction between these two cuisines you abject fucking retard.

To be fair,
Ironically, this is EXACTLY what this guy (and other Mexican Food Maxmos) say about REAL Mexican food whenever anyone points out that in America, "Mexican food" is literally just the same six ingredients served up in slightly different formats.
Almost like this is the dumbest possible "distinction" anyone could ever attempt to draw to differentiate these two cuisines, because they're actually basically identical in this regard and anyone with half a brain realizes that.
"Nooooo, look, trust me, it's TOTALLY different for REASONS!"

their salsas are quite varied and among the best sauces you can get when done well, also pretty labor intensive
the basic corn tortilla with meat and toppings with so many variations is top tier peasant food that you'd have to be insane not to think is delicious in so many forms
they do pretty good with seafood too

"Real Thai food is all just three coconut sauces or whatever, by contrast *REAL* Mexican food has HUNDREDS OF DIFFERENT SUBTLY NUANCED SALSA PREPARATIONS -- trust me, it's night and day, I know these things I'm a CULTURED GOURMAND, I'm not just a retard American fatass who has been to Mexico a few times (because it's right next door) but has never spent any real time in Thailand (because it's far away)."

Oh wow, your little faggot ass town in America has SEVERAL Thai restaurants owned by REAL Thai people, you basically have a vacation home in Phuket!
Sit down for this again: I've been to plenty of Mexican restaurants across America that are owned by REAL Mexican people, and they almost uniformly serve the same six basic ingredients prepared in slightly different permutations over and over again -- just like I've stated repeatedly ITT.

To be fair,
No you're right, REAL Thai food is basic bitch shit and what you eat at your local Thai restaurant in America is basically the real deal that you would get over in BKK.
By contrast, REAL Mexican food is mindblowingly complex, and the reason that Mexican food in America often seems simple and dumbed down is just because America made it that way, you need to go to Mexico to try the REAL stuff.
You have truly figured it all out and aren't just being an obnoxious obtuse little faggot ITT, anyway enjoy your infinitely varied and incredibly complex chimichangas, Juan.

lolololol at Lebanon
The best beef is from Japan or Argentina, shout outs to USA and Brazil for making huge quantities of really good shit per capita. But LOL at the Netherlands and Belgian shit they serve in most of Europe. It's rubbish.
The best chicken is from France in terms of pure quality, with special recognition for India for Tandoori preparation. France also takes top billing in duck, goose, pigeon, ortolan, and squab, though Hudson Valley foie gras is as good as anything they make in France.
The best pork production is from Germany, Japan, and US, with high honors for Korea and China for preparation (but not cultivation).
The best lamb is from New Zealand or Australia (in terms of cultivation), shouts to Greece/Turkey and possibly Lebanon for preparation. I had a Cretian lamb neck this year that was one of the best flavored lamb dishes I've had in years.
If you want horse, you're eating French or Swiss, where it is actually quite good.
America (and Canada) produce the tops of everything else, including venison, buffalo, rabbit, elk, quail, pheasant, etc.
Mexico is the best at producing...crickets? And Lebanon produces jack shit on the global stage, but I guess they grind up meat from other countries and turn it into kebabs, so, uh kudos to them for that.

To be fair,
No, you don't understand -- the "basic bitch" Mexican you get in America is shockingly great, but it's not like the REAL Mexican food you get in Mexico which has an array of infinitely subtle flavor nuances that would make Isaac Newton weep at their sheer complexity.
This is as opposed to Thai food, which is just shit from top to bottom no matter how you slice or where you get it, and also the stuff you get at your local "Thai Restaurant" in Bumblefuck, Connecticut is basically the same shit they serve in Phuket and it's probably because those retards only use like the same four ingredients in every dish they make god what kind of cuisine even is that? (Trust me on this.)
The science is settled and anyone who disagrees with this is like a Jew or something, idk anyway just trust me I know these things (haha yeah).

None of these poaster live in Connecticut. Trust me, I know these things.
And I don't get you Stanning Thai food, which is a good, cheap, spicy eat with some meaningful regional variety (maybe 4 regions), but which consists almost exclusively of tiny pieces of protein with large amounts of starch and lacks the breadth/nuance/delicacy/attention to ingredient quality/variety of Japanese food or the texture/depth/regional variation of Chinese food. Thai is good, but IMO the Asian food hierarchy is Japanese >> Chinese > Thai = Korean > Malaysian = Vietnamese. I really enjoy certain parts of all of these cuisines and have eaten them in their own countries--I'm just saying we can't pretend countries like Vietnam have the same level of cultural attachment to the cultivation and preparation of food as places like Japan or China. I'm 0% shitlib, but part of this is due to historic wealth, geographical realities, wars, and yes, colonialism.

To be fair,
Real talk, I actually prefer Mexican to Thai food -- that's what's so crazy about all of this. And I agree with you that Thai is not the POTUS of Asian foods, although I also do thoroughly enjoy Thai.
But it's just LJL for preening faggots ITT to be pretending that the problem with Thai that disqualifies it from the discussion is that in it's just basic bitch shit and every dish is made with the same four ingredients... meanwhile, btw just in case you dumb Pad See Ew slurping proles didn't know this, MEXICAN FOOD ITH THOOOO COMPLEX AND NUANCED OMGGGGGG DID U EVEN KNO THAT THERE ARE 1000 DIFFERENT THUBTLE VARIATIONTH OF THALTHA THAT ARE ALL THOOOO DIFFERENT AND THPLENDID IN THEIR OWN UNIQUE WAYTH MMMMM YUM YUM TRUST ME I'M A GOURMAND.
Yes, Mexican is great and is actually more complex in its "real" state than most people realize. So is Thai. And also, every single criticism that can be levied at Thai food can also be (and is) levied at Mexican food. It's just peak faggotry to try and pretend otherwise.
