We’ve got homemade meatballs, Italian sausage, and lean ground beef. Did a shallot and a sweet onion as the start, garlic of course, two cans of San Marzanos, 6oz of paste, topped with fresh basil, fresh rosemary, and two tsp of oregano.

Your justification for making bolognese is not relevant to the above posters post. You did not make Sunday Sauce, you made bolognese. Our clients expect better than this.

I did add some red wine when I deglazed the bottom of the pan after browning the meat. And I put some water in the cans of tomatoes after I added those. I have been watching my sauce consistency. I am going for a meaty sauce, but a sauce nonetheless. Will add more water if needed.

My wife doesn’t like meat so I made a side sauce for her. First, I cooked down mushrooms in butter, EEVO, salt. Set aside. Then I did half a carrot, yellow onion , and two stalks of celery. Let these cook in the oil and butter without the mushrooms. Did a shallot next, then added about 5 cloves of garlic. Got that nice and fragrant and went in with a can of San Marzanos and half a can of paste. Added the mushrooms back in. Oregano, fresh basil, fresh rosemary, and some black pepper.

Bam she’s got a nice tomato sauce for her penne that isn’t meat based.
