Also, while I suppose it MIGHT have been customary to bunk up like that in New England at that time, would have a Polynesian have sensed that that was the custom? Seems like he would have needed to be told, since Polynesians can just sleep on the beach and would have no need to share the same bed with a strange man.

It was customary at the time, there really weren't formal 'hotels' for average people, you just stayed in whatever lodging you could get. And Queequeg would have been used to cramped living from working on western ships for a while.
