Heavy hop use in beer came from its anti-spoilage effects and imo has a very different effect on the psyche than a crisp German lager

Belgians aren't super challenging tbh although they are very rewarding and come with few of the issues stated elsewhere in the thread. A DT or even a more common Duvel is surprisingly clear, clean, and "heady", similar to some types of clean liqueurs. The most "challenge" in beer is in saisons and certain ales imo, saisons can be rich to the point of oiliness but typically have tres unique textures of different grain flavors. You could even identify different types of sesame notes in some saison ales with the right palate and frame of mind. People fixate on the hops in ale because Americans are " " but really the various wheats and ryes and what not are what make them distinct and interesting enough to flick thrice over the tooth

I also enjoy some novelty beers like DH's egypt brew (very grapey, novel and a delight against a grain background) and an occasional gose

Also beer isn't "icky" and I enjoy many traditionally masculine challenging drinks like peaty "mouth full of ash" islay scotches and Mayan spit tasting mezcals. It's just torpor inducing in a way other alcoholic beverages are not
