Nimes is also a surprisingly nice small city with some Roman history. Also could maybe do 1 night in Menton to eat at Mirazur. Le Petit Nice is in a history (1917 vintage?) relais & chateau property of the same name and it's in the 6e of Marseille which feels more beach town than city. Going there for 1-2pm arrival, relax by the pool, walk around the hood, have dinner in-house, then go to bed and leave the next day would be fine.
