Theres a lot of cheesy stuff to avoidin Priest's catalog.

Turbo and Ram it Down are to be avoided at all costs.

Ram It Down is hugely underrated. Title track, Hard As Iron, Heavy Metal, Blood Red Skies are all great.

I'd go with Sad Wings of Destiny, Screaming for Vengeance, British Steel, Defenders of the Faith, Painkiller

After that then I'd say Stained Class, Sin After Sin, Ram It Down, Hellbent for Leather

None of their stuff is particularly 'bad'--even Turbo has at least one all time classic on it, and there's some decent stuff from the two Ripper albums

Anything from Angel of Retribution on (when they reunited) is okay but much more power-metally. I think it's still pretty good. Certainly I find their most recent material better than Iron Maiden's.

Another way to go would be the Metal Works compilation, which is a solid greatest hits/best of collection. It's a good cherrypicking of tracks from the period between Sad Wings of Destiny through Painkiller, so it doesn't have their very earliest stuff (Rocka Rolla--although that's not much of a loss) and it doesn't have anything post Painkiller (again, not a huge loss--that stuff isn't core Judas Priest)
