it depends on the fish. flounder is the only smaller fish ill leave skin on. it's less effort to gut/filet by running the knife down the skin than bothering with scaling anyway
if it's something bigger i'll cut it into steaks with the skin on

what about trout
all i did this time was cut down his belly and gut and clean him and cut the head off and then season and air fry
i think i like the filet better because i prefer ***zerobones***
